The cool-climate coastal region of Casablanca was even cooler than average in 2018. In some cases this meant that the grapes were harvested a full month later than in 2017. Slower ripening however meant very high-quality grapes with complex flavour profiles were harvested, producing elegant wines.
80% fermented in stainless steel tanks and 20% in barrels of second and third use using a mixture of native and selected yeasts. 20% of the wine was aged in old barrels for 4 months. Great with grilled cod.
