The Chapel Hill The Block Road Block Shiraz
At our winery vineyard we are fortunate to be the custodians of one of the most unique and inspiring vineyard sites in McLaren Vale. The picturesque undulating hills and ancient geological formations are enhanced by our elevation, as the site perfectly capitalises on the beneficial coastal influence. Each individual block on this vineyard is distinctive and charismatic due to its expressive geology and unique meso-climate. For this reason we have decided to showcase the uniqueness of our winery vineyard in this single block range of wines.
The Chapel Hill The Chapel Chardonnay
The barrel fermentation and maturation has resulted in a more layered and textured palate, whilst still maintaining the trademark varietal citrus and stone fruit purity. The remainder of the wine is held cool in stainless steel tanks and on its yeast lees for 8 months prior to bottling.
The Chapel Hill The Parson Cabernet Sauvignon
The Parson Cabernet Sauvignon is our introduction to explore and enjoy this regal McLaren Vale variety. This wine displays expressive and alluring aromas of liquorice and mulberry. The wonderfully structured and eloquent palate is broodingly complexed by an array of persistent fine grain tannins.
The Chapel Hill The Parson Grenache Shiraz Mouvedre
The Gorge Cabernet Block is one of the jewels of our estate vineyard. Gravelly soils over ancient rocks produces a wonderfully structured wine that speaks intimately of the site where it was grown.
The Chapel Hill The Vicar Shiraz
The Vicar Shiraz displays charismatic layers of blueberry, roasted fennel seeds and cured meats, which are seamlessly interwoven into the firm, but poised, savoury texture. The synergistic balance of the cascading layers of varietal flavour, palate weight, tannin and acidity will ensure that the wine will develop further complexity over the next 15 to 20 years.
Tio Pepe Fino En Rama
Tio Pepe is a Fino style, the most delicate and elegant of the Sherry styles, aged for 4 years under the flor, a unique layer of yeast produced naturally in Jerez.

Founded in 1835 by Manuel Maria Gonzalez. Gonzalez Bypass has since been dedicated to the production of top quality Sherry wines and Spirits. The wine remains for a minimum of 4 years following traditional Solera system under the flor.

Deep garnet red in colour, the aromas are dark and brooding with hints of chocolate and plum lifted by cinnamon spiced French oak. TASTING NOTES
The deep rich colour of this wine indicates its intensity. The nose is full of ripe plum and dark cherries with a hint of white pepper and sweet vanillin. The flavours carry onto the palate which is full of big soft fruit, but balanced by an elegant oak structure and natural acid, resulting in a rich wine with a complex and fresh structure.
